BIANKA – THE PÂTISSIÈRE
Having refined her craft in the top bakeries across Europe, Bianka is the soul of our pastry lab. She brings a level of precision that borders on the automated, creating mono-desserts that are as much a visual statement as they are a culinary experience. For Bianka, pastry is a science where perfection is the only standard.
JAMES – THE CHEF
With Filipino roots, a Vienna upbringing, and a resume forged in Michelin-starred kitchens, James is the engine behind our brunch concept. He translates the discipline of fine dining into honest, soulful food. His philosophy is simple: treat the product with respect and make it taste unforgettable.
